Refreshing.

I'm longing for sunny days, shorts, blended drinks, outdoor bubble blowing, sidewalk chalk doodling, and colorful flowers in my garden. -It's all so refreshing to me.













I enjoy warmer days. Humming birds in the garden. Our daughter running through the grass, and simply enjoying her time being a kid. I enjoy my time in my garden planting and pruning. Gathering up fresh vegetables, washing, and preparing them in our meals. -I miss all of this. The weather is still cold here in Colorado, but I'm looking forward to sunny days! -It's all just so refreshing.

Cold day...

During the night it snowed. We woke in the morning, and our daughter was thrilled to see a snowy day.
It's a cold day, and we have been spending our time indoors.  -Creating, stamping, and rolling play dough, painting, baking banana bread, playing with cars, and enjoying some simple pasta.  I'm really enjoying our time inside  on this cold day.

Simple days...


Lately... 


I've been sipping on hot tea, with lemon and honey. I'm generally not picky when it comes down to tea, but I have been drinking decaf.  -This has been my evening pick me up drink. Hot, and simply soothing. 



It snowed for one day. Our pug is not a fan of the snow; so when it snows he makes his way out in a hurry, and runs in a soon as possible. This day we decided to have a play date with a friend and her son. It was nice. -The little ones had so much fun. And it's so nice sitting, enjoying adult conversation. 




Morning time, I spend it preparing breakfast for my little picky eater. -Apples, waffle, and yogurt. She seems to enjoy dipping her apples into her yogurt. After breakfast, we work on a simple craft. -I take this quiet time for just my daughter, and I. -It's very peaceful. We have been going onto her Abcmouse.com. We have been learning about opposites, and enjoying our time reading a few of our favorite books.




For dinner I prepared a simple dish. -Lemon roasted chicken with, tomatoes, herbs, and potatoes. For our side, I roasted some cauliflower, with olives. This meal was simple, and delicious.


Nights- lately I've enjoyed my sleep more. I normally have a hard time falling asleep. Once we get our little one to sleep, the lights go out, and shortly after we are off to sleep.  

Next week I have both a dental, and doctor appointment on the same day. I'm okay with my doctor visit, and I'm actually looking forward to it. -I absolutely love my doctor. -He was the one who performed my surgery for my Endometriosis. As far as my dental visit, it's just a cleaning. Thank goodness. I flinch at the thought of visiting a dental office. -No I'm not kidding! So I'll make sure this weekend we take long park days, enjoy some time out in the sun, and I might even bake. I enjoy my time with my family.  I  hope you all have had a wonderful week.

Korean Bulgogi (steak) and lettuce wraps

Korean Bulgogi (Steak) with Lettuce wrap

I often crave my mothers cooking. So when this happens, I cook up a Delicious Korean meal.

Ingredients:
1 beef top round steak/ thinly sliced, or cut into cubes
4 tablespoons of  Soy sauce
1 tablespoon of sugar
2 tablespoon of Sesame oil
1 teaspoon minced, peeled ginger (fresh)
1/4 teaspoon of Korean chili pepper or Cayenne pepper
1 garlic clove crushed/ or minced
1 tablespoon of sesame seeds

Vegetables:
Carrots thinly sliced- 1 cup
Celery thinly sliced-1 stalk
Green onion (garnish)
Lettuce 

Sides:
Kimchi
Korean red pepper paste (Gochujang)
Seaweed
Egg rolls/ pot stickers/or Mandu -Korean dumplings
Sticky Rice (I use my Rice cooker)


In a large mixing bowl add in, meat, soy sauce, sugar, sesame oil, ginger, Korean chili pepper, garlic, and sesame seeds.  If you want more flavor, I suggest marinating this mixture overnight.  

In a skillet, add 1/3 cup of water. Add in carrots, and celery; cook over medium-high heat. Allow carrots and celery to become tender, and somewhat crisp. 

Add in your meat; with mixture, and cook allowing the flavors to come together. Cook for about 5 minutes, or until meat loses its pink color. This is optional but you can take some of your green onion, and stir  in with your meat, and vegetables. 

Once it all cooks up, you're ready to enjoy!

Little artist in action

The past few days have been wonderful. We have embraced this sunny weather, and have enjoyed our time together. Lately, we have enjoyed park days, nature scavenger hunts, and just running around being silly. I'm in love with this life, and I truly enjoy watching our daughter enjoy these simple moments. - I feel content, and just so joyful inside. My husband and I celebrated our 11th wedding anniversary on the 17th. We enjoyed sitting back and taking a trip down memory lane. We indulged in sweet strawberries, and marshmallows covered in chocolate.

Lately, I’ve been experimenting with several different natural cleaning solutions. I recently saw something about orange peels, and vinegar. So I took some orange peels, and filled a jar halfway with vinegar. It's been sitting for a few days now. -You can now smell the citrus from the orange peels. I'll probably use this solution on hard surfaces to remove hard water build up. When it comes to cleaning; I'm that person you will find on hands on knees scrubbing, and disinfecting everything in sight.-I'm sure my mother has a lot to do with this!

 It's been nice soaking up the beautiful sun, and enjoying my time with my family. These sweet sunny days..have been very good to us. I hope you all have enjoyed your time with your family.
