Delicious Fall Recipe: Roasting Pumpkin Seeds

🎃 Delicious Fall Recipe: Roasting Pumpkin Seeds If you're anything like me, your favorite season is Autumn, and I get excited when making fall snacks and new recipes. My family loves it when I roast pumpkin seeds for a quick and easy snack. Roasting pumpkin seeds is one of those simple pleasures that turns seasonal scraps into a crunchy, crave-worthy snack. Here's my step-by-step method—with measurements—to help you make the perfect batch. Step 1: Scoop Out the Seeds Begin by carefully using a sharp kitchen knife to slice off the top portion of your pumpkin, making your cut around the stem to create a wide enough opening for easy access to the interior.  Once the top is removed, reach inside the pumpkin to extract the seeds. You can do this with your bare hands, but I prefer wearing a latex glove to keep things clean and comfortable—though this step is entirely optional.  Alternatively, you can use tools like an ice cream scooper, a sturdy fork, or a specialized pumpkin seed...

A jolly good time.

Lately, we've been having a jolly good time!  There has been baking, gift wrapping, board games, Christmas music and twinkling lights everywhere. I love this time of the year. Our home smells of sweet, warm scents.  Our Christmas lights come on every evening around five. We recently picked up our Starbucks Holiday blend. My husband makes a fine cup of coffee. Some of our selected Christmas music brings back a few childhood memories. One song in particular is, Rudolph the Red Nosed Reindeer. I have a picture of me from when I was younger; I performed this song in Germany and wore the the antlers and had a little red nose.  I wasn't quite a wee one, but I was in elementary school at the time. Our oldest daughter loves asking questions about her daddy and I. She normally asks questions about our childhood. Growing up my mother never wrapped our Christmas gifts. It wasn't such a big deal, but now that I am older and have children of my own, I have s...

Peaceful moment.

This peaceful moment took place in November 2013. Cold weather, coffee brewing, and these delicious Jam cookies were in the oven baking. It was wonderful and we enjoyed them as we sipped our coffee and stayed warm indoors.  Each Thursday I will be posting a peaceful moment. I would love to hear what your peaceful moment has been during the week or a peaceful memory from the past. Leave your comment below or on Google+.
