Home.- Lately

Cooking. Cleaning. Warmer weather. Lessons. Playtime. Library visits. Here we are. - Warmer weather has arrived. Okay, but wait just one minute... we're being told we'll get some colder weather this week. - Maybe even another snow shower. I've come to expect this kind of weather. We're definitely looking forward to spring. Lately, our trips to our local library are happening more often. I'll usually pick out a few books for both girls. - Every so often, my daughter will want to pick out her own books. She's constantly reminding me about how much, and how fast she is growing. I recently checked out a book on fun ways to garden for the whole family. I'm sure we'll get some good use out of this book. Last year I planted a few vegetables in pots. I'm thinking about expanding this year. - A bigger garden, and a lot more herbs. Do you like to garden? Last month, I made a large batch of Kimchi....

We're always so thrilled to try new recipes. Cooking at home is something we enjoy very much. We recently made a delicious dish. - Cabbage with beef/pork and rice topped with a spicy tomato sauce.  This delicious dish is one of   Martha Stewart's recipes.  It was very easy to prepare and it came together very well. Our 4-year-old daughter even had seconds.  We started off with the spicy tomato sauce. Heating a pan and adding onion, garlic, and red pepper flakes. We had this to cook until it was all tender. After putting our crushed tomatoes in a food processor, we then added the tomatoes and juice to the pan. We allowed it all to simmer and later thicken.  We also added a few of our own spices along with salt. While our sauce was cooling, I brought a pot of hot water to a boil. I added a few pinches of salt to the boiling water.  Then, I added the cabbage. It was easier for me to peel the cabbage apart prior to adding it to the ...

This week.

This week: -The sun was shining. It was beautiful out. I think this may be the last week that I am able to enjoy my valentine's flowers. I've been giving them as much sunlight as possible.  -This week we worked on lessons with our oldest daughter. She's currently counting to one hundred and writing her own name. She's been writing her name for some time now. But what amazes us now is that she does it without us helping her. -I swear I tell her to slow down and stop growing. Our littlest one is now 5 months. She's rolling all over the place! -We took a trip to our local library. We checked out a few books and attended a few events. We're currently listening to the audiobook-  Caps for sale.   -I purchased a new nail color a week or so ago. When I have some time to myself; soaking my feet and painting my nails is something I enjoy doing.  - I took a week off from working out. Truthfully, my motivation and all my willingness had gone away. I...

Cooking together.

Brown rice with vegetables and marinated pork chops In our home, we really enjoy cooking together. When we're all in the kitchen we seem to always have a good time. Whether it's a quick snack, a sweet treat, or a dinner we're preparing. We always enjoy preparing these as a family.  Brown Rice with Vegetables: Diced-Carrots, red onion, cilantro, broccoli, red/green bell pepper, and garlic. Seasoned with: Chili powder, cumin, ground pepper, salt, a dash of cinnamon, and garlic powder. Stir together with brown rice. We normally cook our brown rice in the oven for about an hour. Pork chops: marinated in Worcestershire sauce,  Italian dressing, whole peppercorn, and soy sauce. Cooked with peppers and onions. I also prepared a quick and easy cucumber salad. -cucumbers, sprinkle with garlic salt seasoning, and pepper and toss in Italian dressing. All done!  Do you enjoy cooking together as a family? Exploring, Baking and more.

“Let Nature be your teacher.” – William Wordsworth This weekend: We explored the garden. Searching for worms, beetles, and what other interesting insects we came across. Our daughter caught a few with her insect net and placed them in her bug catcher. Soon after exploring with her magnifying glass, we released these tiny critters back where they belong.   We also enjoyed our time exploring flowers. Up close and personal -using the  magnifying  glass. We discussed the different shapes, textures, designs, and more. In my garden: Flowers are bloomed, bees are happy-buzzing around and hummingbirds stop in for a visit. In the kitchen- My husband decided to make a few donut balls.- Warm and iced over with a sweet delicious frosting. We enjoyed every last bite... Later in the kitchen- I prepared a side dish to go along with the brisket my husband had been cooking for hours.  I put together one of my favorites-cauliflower...

Korean Bulgogi steak and lettuce wraps

Korean Bulgogi (Steak) with Lettuce wrap I often crave my mother's cooking. So when this happens, I cook up a Delicious Korean meal. Ingredients: 1 beef top round steak/ thinly sliced, or cut into cubes 4 tablespoons of  Soy sauce 1 tablespoon of sugar 2 tablespoons of Sesame oil 1 teaspoon minced, peeled ginger (fresh) 1/4 teaspoon of Korean chili pepper or Cayenne pepper 1 garlic clove crushed/ or minced 1 tablespoon of sesame seeds Vegetables: Carrots thinly sliced- 1 cup Celery thinly sliced-1 stalk Green onion (garnish) Lettuce  Sides: Kimchi Korean red pepper paste ( Gochujang ) Seaweed Egg rolls/ pot stickers/or Mandu -Korean dumplings Sticky Rice (I use my Rice cooker) In a large mixing bowl add in, meat, soy sauce, sugar, sesame oil, ginger, Korean chili pepper, garlic, and sesame seeds.  If you want more flavor, I suggest marinating this mixture overnight.   In a skillet, add 1/3 cup of water.
