It's been raining all weekend. With all this rain this just means more flooding.  We have been fortunate and have not experienced much flooding in our area. (I do know the creek nearby had a flood warning for a few hours.)  Since it's been raining, and our little one is still sick we decided to stay indoors over the weekend. (I may have sneaked outside a few times) :)
Indoors it's been warm and cozy. Lately, the air has been cooler, and windows haven't really been opened. It's strange because it's cool enough for it, but then our house seems to get a little too chilly.
 
On Saturday we enjoyed some soup. I prepared Beef soup with Chayote/Caldo de Res con Chayote. A friend had mentioned this soup, and with our little one being sick, I wanted to try a new recipe. I actually looked up a few different recipes for this soup.  We of course added a few of our own spices to the soup. In the end, it was delicious.
With this rainy weather, I was in the mood to do some baking. We had extra apples stored away in the refrigerator, so I figured we could use them. I made us an apple pie. It was perfect with the weather.  The sun came out for a few, and so I made a pitcher of sun tea. Normally I put it out on our back porch, this time I just put it on the kitchen windowsill.
 
Since our daughter has been sick, she enjoys laying out in the living room bundled up with her dolls. She hasn't had much energy for many activities. She has been asking us for warm milk, with vanilla. She loves how my husband makes it for her. Also with her being sick, she has been sneaking into our room in the middle of the night. She makes her way between us, and we all end up not getting enough sleep. Today she seems to have been feeling a little better.
Sunday morning, my husband made us some pumpkin pancakes with silly faces on them. (He used cinnamon chips to create the faces). It sure did put a smile on all of our faces. :)

  7. Ok your apple pie looks AMAZING! I'm not a huge apple pie fan; but seeing how pretty it was made me want some :)

    Its no fun having a sick little one; but its sounds like her mommy and daddy are taking excellent care of her!

    Our weekend was pretty calm. A little cleaning; church; pizza and football; and a little more cleaning.

Today’s tiny DIY win: turning an empty lemon‑ginger tea tin into a planter for a sweet mint plant that needed some love. I cleaned the tin, added drainage, and nestled the mint inside.
